Transsubstantiation
New York banned trans fats. I was telling my friend Dan that I thought this was cool. He said, “Hey, aren’t you the guy who said that when someone is in favor of banning something, it always turns out that he is secretly doing that thing himself?” Presumably I said this as the Foley scandal was breaking.
I said something like, “Yeah, but that only applies to other people.”
Tonight while I was making dinner, the large tub of Kroger vegetable shortening on top of the fridge seemed to be staring at me.

Lard has no trans fats, so I didn’t think you’d have this dirty secret :)

I thought you’d switched to using Crisco’s new zero-trans-fat shortening. What’s with the Kroger tub?
(“Zero trans fats” really means “almost but not quite one gram per serving,” doesn’t it?)

ctate, they were out, and I had emergency donuts to make. And I was getting low on lard. In fact, I have no leaf lard in the house at the moment at all. I need to check in with Samish Bay Cheese; they said they were slaughtering a pig this month.

If you clarify butter and let it cool to a solid again, you can use that instead of Crisco and it actually tastes good, which can’t necessarily be said of Crisco.

Jason, I always substitute lard for Crisco, except that I happened to be low on lard due to bad planning.
