&lt;p&gt;Same idea as above...summer squash, peppers, corn, tomatoes, onions.  Roasting the peppers first adds a nice layer of depth.&lt;/p&gt;

&lt;p&gt;Warm some corn tortillas, make little tacos, crumble on some cotija, and say &quot;calabacitas&quot; a lot.  You can&#039;t go wrong...&lt;/p&gt;
