There's an excellent gratin recipe in Jerry Traunfeld's second cookbook. It calls for spinach with lovage or mint to be added to the greens. I've made them with mint and it was an OMG dish. No bacon in it but still a surprisingly delicious dish.

I threw this together tonight (leaving out the bacon) despite Sarah's skepticism, and it turned out delicious and so filling. Thanks for the great and simple recipe!

Yes, it was delicious. I will be far more generous with the greens next time, as I used one bunch of kale and a pound of spinach leaves and still came up with only about a cup of cooked greens.

I note that this would also be a great Thanksgiving side.

Laurie told me how good this was after the first time you made it. I'm adding more greens to my list for the Ballard market tomorrow.

Just had it for dinner. Loved it! Next time, Wendy needs to make more of it.

Thanks for sharing.

I ended up going to the store anyway, so I bought cream, but I'll take it under advisement for the future.

Hmm. If you don't have cream handy, what about bechamel? I have a feeling milk might make it runny.
