		<description>&lt;p&gt;I used a recipe from James Peterson's &lt;em&gt;Duck Cookbook&lt;/em&gt;. It was very simple: brown the legs, the braise with wine, stock, onion, carrot, garlic. Reduce the braising liquid for sauce. Top with sauteed mushrooms.&lt;/p&gt;
