&lt;p&gt;For deep-frying, you really need a good thermometer. If there&#039;s smoke, your oil is too hot.&lt;/p&gt;

I ask because every time I try to seriously fry something in our small apartment, it creates mass smoke and David hollering that I am trying to kill him or burn the place down. (My attempt at fried zucchini blossoms nearly ended in divorce.) so I am curious about how apartment dwellers fry.&lt;/p&gt;
