I love braised short ribs. My favourite recipe has them braised in a mixture of 1 part organic root beer, 1 part beef stock, 1/8 part crushed tomatoes, enough red wine vinegar to balance the sweetness (check and recheck during cooking), garlic, chopped onion, and thyme. Season and sear ribs before adding braising liquid, and braise for 3.5-4 hours, covered, in a 250 degree oven. Strain the sauce, and reduce it further on the stovetop until it's sticky and thick. Spoon over ribs. I was kind of doubtful that they would be good without any red wine or mirepoix, but it's fantastic!

Hm. I have yet to find any "nonalcoholic beer" that's truly non-alcoholic. All the ones I've seen so far claim to be non-alcoholic, and then in fine print, proclaim that it has less than 5% alcohol.

I guess katre will have to experiment a bit to find an alternative.

So now you're not writing restaurant reviews anymore, you have to get your fix by reviewing our comments?

Sad.

katre, I find the question ill-posed. That said, I'll bet nonalcoholic beer would work fine.

Mmm, sounds tasty. What could I substitute for the beer? Just water?
